shi·i·ta·ke n. pl. shiitake (sh-täk-e, sh-täk-e) An edible eastern Asian mushroom (Lentinus edodes) having an aromatic, fleshy, golden or dark brown to blackish cap. Also called Chinese forest mushroom, golden oak mushroom, Oriental black mushroom, Emperors Mushroom. Welcome to the Shiitake Mushroom Center.
